Mace is the outer layer of nutmeg, but with a much lighter and sweeter flavour, but more pungent in aroma. Mace blades are the unground version of mace and is mostly used in baking, Caribbean and Indian cuisine.

How to Use

Mace blades are best used in curries, soups and sauces, as well as dessert recipes. This spice works particularly well with other spices such as Coriander, Cloves, and Chillies. It is best used when it can be left to infused, it can then be taken out towards the end of the recipe.

Cooking Tip

Add some blade mace to some mulled wine or cider one Christmas along with cinnamon and cloves.

Mace has been known to be used in Chinese and Indian tradition medicine for treating illnesses related to the digestive system as it is thought to help relieve nausea.
